Nutella Brownies | Eggless Wholewheat Nutella Walnut Brownies Recipe
Best thing to do in quarantine? It’s gotta be baking right?
This recipe combines the best of both worlds: soft chewy wholewheat brownies and Nutella (heaven in a box!). These are crunchy, have a dense texture and and are gooey in the centre, a great treat for our taste buds :). Dying to know how I got a thick layered Nutella sandwich in the middle of the fudgy brownies? A big flat layer of frozen Nutella slab, yep, you read that right! A big fat layer of Nutella sandwiched in the middle of our gooey brownies.
I’ve arrived at this recipe after some trial and error, and guess what? The brownies turned out just perfect! My whole family loved them. This combination is a sure shot winner and before I write anything else, here is the recipe for you to try and relish the brownies yourself :)

Ingredients:
1.5 cups of wholewheat flour
0.5 cup of oil (I used vegetable oil)
1 cup cocoa powder
1.5 tsp baking powder
1.25 cups caster sugar
1.5 cups of milk
1 tbsp Nutella for the batter
3 tbsp Nutella to be frozen
Handful of walnut, chopped
A few drops of vanilla essence
Oil & flour for greasing
Method:
Nutella slab:
1. Grease your pan and line with parchment paper
2. Scrape 3 tbsp Nutella into pan, freeze for 1 hour or more until frozen
3. Remember to take this out only after you’ve poured half the batter into the baking tray because it melts really quickly!
Batter:
1. Pre-heat the oven at 180 degrees C for 10 minutes
2. Line a baking tray with parchment paper and keep aside
3. Sift the flour, cocoa powder, baking powder and sugar together in a big bowl
4. In a separate bowl, beat the milk, oil, vanilla essence and 1 tbsp of Nutella together (I used an electric whisk)
5. Pour the wet whisked ingredients into the sifted flour and mix until there are no lumps
Assemble & Bake:
1. Pour half the batter into the pan and sprinkle some walnuts
2. Use a spatula to lift the frozen Nutella slab and place on top
3. Pour the remaining batter on top of the Nutella slab and add the remaining walnuts
4. Bake in the pre-heated oven for 20-25 minutes or until a skewer inserted comes out clean
5. Allow it to cool completely before proceeding to slice it into nest squares or go ahead and eat warm brownies if you like them like that :)
