Milk Pedas at home!



This is the simplest recipe you'll see today! Remember the good old days of going to a sweet shop and buying pedas? While Covid-19 has killed all such simple joys of our life, it can't stop us from relishing delicious pedas at home! That too, without any mawa (reduced dry milk) from the market! Salivating already?

Pedas are usually bought and served at almost all Indian festivals. This traditional Indian sweet is hugely popular and has many variations. While some variations require many ingredients, this one is quite simple. All you require are full fat milk, sugar, kesar and cardamom powder. Yes, you read that right! Only four ingredients. Easy-peasy, no? No condensed milk, milk powder, khoya, ghee or cream! However, you do require some patience to cook this 'cause the milk needs to be reduced to a paste like texture. Therefore it needs to be regularly stirred to prevent it from sticking to the pan and getting burnt.

Before we move on to the recipe, we'd like to share some tips with you to help you make your pedas just right:
  1. Use full fat milk. If you don't have any, add milk cream (malai) to the milk you have. However, full fat milk will produce the best results
  2. If you are using any milk other than full fat milk, then increase it's quantity
  3. You can add any other flavours to your pedas like vanilla, chocolate, strawberry, rose water etc
  4. Try cooking at medium or low flame to reduce your chances of burning the milk
  5. Keep stirring the pan at regular intervals to prevent the milk from sticking to the bottom and burning
  6. Keep scraping the sides of the pan to include the malai (milk cream) being formed on the sides into the milk
  7. If you remove the milk paste from the pan and transfer it to another bowl, then it cools faster
  8. You can give your pedas any shape that you prefer
  9. You should consume the pedas within 2-3 days

Ingredients:

1 litre full fat milk

1.5 cups sugar

1/4 tsp cardamon powder

Kesar strands

Method:

  1. Start heating the milk in a large pan on medium flame
  2. Stir occasionally to prevent the milk from sticking to the bottom of the pan and burning
  3. Get the milk to a boil
  4. Keep scraping the sides of the pan to include the malai (milk cream) being formed on the sides into the milk
  5. Stir continuously, the milk should start thickening, on medium to low flame
  6. After about 30 minutes, the milk should start becoming creamy
  7. Keep on stirring and after a while, the milk should turn to a paste like texture
  8. Now add the sugar and stir to dissolve the sugar on medium to low flame
  9. Then add a few strands of kesar to add its flavour to the pedas
  10. Keep on stirring till the mixture separates from the pan and holds shape
  11. Remove the paste from the pan and transfer it to another bowl. This cools down the paste faster
  12. Make small sized balls of the paste and roll into desired shape
  13. You may also decorate the pedas with kesar strands
